  • ½ cup unsalted butter, melted

  • 16 oz cream cheese, softened
  • ½ cup sour cream
  • 1 cup granulated sugar
  • 2 tsp pure vanilla extract
  • 3 large eggs, room temperature
  • 2 tbsp cornstarch

Instructions

  1. Preheat the oven to 350°F (175°C). Combine graham cracker crumbs and melted butter in a bowl; press firmly into the bottom of a springform pan to form the crust.
  2. Melt white chocolate in a microwave-safe bowl in increments until smooth; allow to cool slightly.
  3. In another bowl, beat cream cheese until creamy; add sugar and mix well. Incorporate sour cream and vanilla extract until combined.
  4. Add eggs one at a time on low speed; fold in cornstarch gently.
  5. Puree half the raspberries with sugar then swirl into the batter; pour over crust and bake for 50-60 minutes until edges are firm.
  6. Cool completely at room temperature, then refrigerate for at least four hours before serving.
