  • 1 cup pumpkin puree
  • 4 large eggs
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 can (14 oz) sweetened condensed milk
  • 1 can (12 oz) evaporated milk
  • 1 cup heavy cream
  • 2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. In a mixing bowl, beat sugar and eggs until fluffy. Mix in pumpkin puree and vanilla.
  3. In another bowl, whisk flour, baking powder, cinnamon, nutmeg, and salt. Fold into wet ingredients until just combined.
  4. Pour batter into the prepared dish and smooth the top. Bake for 30-35 minutes until golden brown.
  5. Mix sweetened condensed milk, evaporated milk, heavy cream, and additional vanilla in a bowl.
  6. Poke holes in the cooled cake with a fork or skewer and pour the soaking mixture over it. Refrigerate overnight.
  7. Whip heavy cream with powdered sugar until soft peaks form; spread on the cake before serving.
