Instructions

  3. In another bowl, mix eggs, vegetable oil, buttermilk, and vanilla until smooth.
  4. Gradually add the wet mixture to the dry ingredients and stir until just combined.
  5. Fill each cupcake liner two-thirds full with batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean. Allow cooling before frosting.
  7. For the frosting, beat cream cheese until fluffy, then gradually add powdered sugar and cocoa until smooth.
