Description

Garlic Parmesan smashed potatoes are a delicious combination of crispy edges and creamy interiors, infused with roasted garlic and rich Parmesan. This crowd-pleaser is perfect for any meal.


Ingredients

  • 1.5 lbs Yukon Gold or red potatoes
  • 4 cloves fresh garlic
  • ½ cup grated Parmesan cheese
  • 4 tbsp unsalted butter
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • Fresh herbs (optional)

Instructions

  1. Wash and cut the potatoes into halves or quarters for even cooking.
  2. Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
  3. Drain and return the potatoes to the pot over low heat to evaporate excess moisture.
  4. Gently smash each potato to about half an inch thick.
  5. In a bowl, mix melted butter, minced garlic, Parmesan, salt, and pepper; pour over potatoes and fold gently.
  6. Preheat oven to 425°F (220°C). Drizzle olive oil over smashed potatoes on a lined baking sheet.
  7. Roast for 25-30 minutes until golden brown and crispy.
