- 1.5 lbs Yukon Gold or red potatoes
- 4 cloves fresh garlic
- ½ cup grated Parmesan cheese
- 4 tbsp unsalted butter
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- Fresh herbs (optional)
Instructions
- Wash and cut the potatoes into halves or quarters for even cooking.
- Boil the potatoes in salted water until fork-tender, about 15-20 minutes.
- Drain and return the potatoes to the pot over low heat to evaporate excess moisture.
- Gently smash each potato to about half an inch thick.
- In a bowl, mix melted butter, minced garlic, Parmesan, salt, and pepper; pour over potatoes and fold gently.
- Preheat oven to 425°F (220°C). Drizzle olive oil over smashed potatoes on a lined baking sheet.
- Roast for 25-30 minutes until golden brown and crispy.
