  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 2 large eggs
  • 1 cup milk (buttermilk preferred)

  • 3 tbsp melted butter

Instructions

  1. Preheat your oven to 400°F (200°C) and bake the pricked sweet potatoes until tender (about 45 minutes).
  2. Once cooled, scoop out the flesh into a mixing bowl and mash until smooth.
  3. Mix in flour, baking powder, cinnamon, milk, eggs, and melted butter until combined.
  4. Heat a nonstick skillet over medium heat and add butter to coat.
