  • 1 whole chicken (34 pounds)
  • 6 cloves fresh garlic, minced
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh rosemary, chopped
  • 4 tablespoons olive oil
  • 2 cups carrots, chopped
  • 2 cups potatoes, chopped
  • 1 onion, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the whole chicken under cold water and pat dry.
  3. In a bowl, mix minced garlic, thyme, rosemary, olive oil, salt, and pepper. Rub the mixture over the chicken and inside the cavity.
