- 3–4 boneless, skinless chicken breasts
- 2 tbsp extra virgin olive oil
- 2 tsp Mexican spice blend (cumin, chili powder, paprika)
- 1 cup long grain rice (jasmine or basmati)
- 1 can (15 oz) black beans, rinsed
- 1 cup corn kernels (fresh or frozen)
- 1 cup diced tomatoes
- 1 cup diced bell peppers
- 1/2 cup diced red onion
- 1 ripe avocado, sliced
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
Instructions
- Prepare your ingredients by chopping veggies and rinsing the black beans.
- Cook the rice: Boil 2 cups of water, add rice, cover, and reduce heat for 15 minutes until fluffy.
- Marinate chicken: Mix olive oil with Mexican spice blend; coat chicken breasts and let marinate for at least 30 minutes.
- Sear the chicken: Heat a skillet over medium-high heat; cook marinated chicken for about 6-7 minutes on each side until golden brown.
- Prepare toppings: Dice tomatoes, chop bell peppers, slice avocados and squeeze lime juice over avocado to prevent browning.
- Assemble bowls: Start with rice at the bottom, layer sliced chicken followed by black beans, corn, veggies, avocado slices, cilantro, and additional lime juice if desired.
