  • ¼ cup granulated sugar

  • Food coloring gel (green)
  • ½ cup unsalted butter (softened)
  • 4 oz cream cheese (softened)
  • 2 cups powdered sugar
  • Sprinkles or edible glitter for decoration

Instructions

  1. Preheat oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. In a bowl, sift together almond flour and icing sugar twice.
  3. In another bowl, whip egg whites until frothy; gradually add granulated sugar until stiff peaks form.
  4. Gently fold in vanilla and peppermint extracts, then add food coloring until desired color is reached.
  5. Pipe small circles onto prepared baking sheets and let rest for 30 minutes to form a skin.
  6. Bake for 15-18 minutes until slightly risen with feet; cool on wire racks.
  7. For the filling, beat butter and cream cheese until fluffy; gradually mix in powdered sugar and remaining extracts.
  8. Pipe filling onto half of the cooled macaron shells, sandwich them together, and decorate as desired.
