  • 12 oz Andouille sausage (sliced)
  • 1 cup bell peppers (chopped, mixed colors)
  • 1 medium yellow onion (chopped)
  • 4 cloves garlic (minced)
  • 1 cup long-grain rice
  • 2 cups low-sodium chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tsp Cajun seasoning
  • 2 green onions (sliced)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  2. In a large bowl, combine shrimp, Andouille sausage, and Cajun seasoning until evenly coated.
  3. Add chopped bell peppers, onion, and minced garlic to the bowl; mix well.
  4. Stir in uncooked rice, canned tomatoes, and gradually pour in chicken broth while mixing until combined.
  5. Spread the mixture evenly on the sheet pan and bake for 25-30 minutes until the rice is tender and liquid is absorbed.
