Ingredients

  • 34 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 diced onion
  • 3 cloves minced garlic
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste

Instructions

  1. Set your Instant Pot to ‘Sauté’ mode and heat olive oil. Sauté onion until translucent, then add garlic.
  2. Stir in rinsed rice, thyme, salt, and pepper; mix well.
  3. Place chicken breasts on top of the rice mixture.
  4. Pour chicken broth over the ingredients without stirring.
  5. Seal lid and cook on ‘Manual’ or ‘Pressure Cook’ for 10 minutes. Allow natural release for 10 minutes before quick-releasing remaining pressure.
  6. Fluff rice with a fork and shred or slice chicken as desired before serving.
