- 3–4 boneless, skinless chicken breasts
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 1 diced onion
- 3 cloves minced garlic
- 1 teaspoon dried thyme
- Salt and black pepper to taste
Instructions
- Set your Instant Pot to ‘Sauté’ mode and heat olive oil. Sauté onion until translucent, then add garlic.
- Stir in rinsed rice, thyme, salt, and pepper; mix well.
- Place chicken breasts on top of the rice mixture.
- Pour chicken broth over the ingredients without stirring.
- Seal lid and cook on ‘Manual’ or ‘Pressure Cook’ for 10 minutes. Allow natural release for 10 minutes before quick-releasing remaining pressure.
