- 4 bell peppers (green or red)
- 2 cups cooked shredded chicken
- 1/2 cup buffalo sauce
- 4 oz cream cheese, softened
- 1 cup shredded cheddar and mozzarella cheese blend
- 2 green onions, chopped
- Ranch dressing (optional)
Instructions
- Preheat oven to 375°F (190°C). Prepare an oven-safe baking dish.
- Cut the tops off the bell peppers and remove seeds.
- In a bowl, mix shredded chicken, buffalo sauce, cream cheese, half of the shredded cheese, and green onions until well combined.
- Stuff each pepper generously with the chicken mixture and place upright in the baking dish.
- Top with remaining shredded cheese, cover with foil, and bake for 25-30 minutes until peppers are tender and cheese is bubbly.
- Remove from oven, let cool slightly, drizzle with ranch dressing if desired, and serve.
