Description

Buffalo Chicken Stuffed Peppers are a deliciously spicy dish filled with creamy buffalo chicken, perfect for game nights or cozy dinners.


Ingredients

  • 4 bell peppers (green or red)
  • 2 cups cooked shredded chicken
  • 1/2 cup buffalo sauce
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar and mozzarella cheese blend
  • 2 green onions, chopped
  • Ranch dressing (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Prepare an oven-safe baking dish.
  2. Cut the tops off the bell peppers and remove seeds.
  3. In a bowl, mix shredded chicken, buffalo sauce, cream cheese, half of the shredded cheese, and green onions until well combined.
  4. Stuff each pepper generously with the chicken mixture and place upright in the baking dish.
  5. Top with remaining shredded cheese, cover with foil, and bake for 25-30 minutes until peppers are tender and cheese is bubbly.
  6. Remove from oven, let cool slightly, drizzle with ranch dressing if desired, and serve.
