Ingredients
- Sausages (pork, chicken, or vegan)
- Potatoes (Russets or Yukon Gold)
- Unsalted Butter
- Heavy Cream
- Onion
- Low-Sodium Beef Broth
- All-Purpose Flour
- Salt & Pepper
- Fresh Parsley (optional)
Instructions
- Peel and chop 2 pounds of potatoes into even chunks. Boil in salted water until fork-tender (15-20 minutes).
- In a skillet over medium heat, cook your sausages until golden brown (10-12 minutes). Remove and set aside.
- In the same skillet, sauté chopped onion until softened (5-7 minutes).
- Sprinkle flour over onions and stir for 1 minute. Gradually whisk in beef broth and simmer until thickened (4-5 minutes).
- Drain potatoes and return to pot. Add butter and heavy cream; mash until smooth. Season with salt and pepper.
- Serve mashed potatoes topped with sausages and drizzle with gravy. Garnish with fresh parsley if desired.
