Ingredients

  • Sausages (pork, chicken, or vegan)
  • Potatoes (Russets or Yukon Gold)
  • Unsalted Butter
  • Heavy Cream
  • Onion
  • Low-Sodium Beef Broth
  • All-Purpose Flour
  • Salt & Pepper
  • Fresh Parsley (optional)

Instructions

  1. Peel and chop 2 pounds of potatoes into even chunks. Boil in salted water until fork-tender (15-20 minutes).
  2. In a skillet over medium heat, cook your sausages until golden brown (10-12 minutes). Remove and set aside.
  3. In the same skillet, sauté chopped onion until softened (5-7 minutes).
  4. Sprinkle flour over onions and stir for 1 minute. Gradually whisk in beef broth and simmer until thickened (4-5 minutes).
  5. Drain potatoes and return to pot. Add butter and heavy cream; mash until smooth. Season with salt and pepper.
  6. Serve mashed potatoes topped with sausages and drizzle with gravy. Garnish with fresh parsley if desired.
