Ingredients

  • 34 boneless, skinless chicken breasts
  • 8 oz penne pasta
  • 8 oz cream cheese
  • 1 cup low-sodium chicken broth
  • 1 packet ranch seasoning mix
  • 1 cup shredded cheddar cheese
  • Minced garlic (optional)
  • Chopped green onions (for garnish)
  • Salt and pepper to taste

Instructions

  1. Season chicken breasts with salt and pepper. In a skillet over medium heat, add oil and sear chicken for 6-7 minutes on each side until golden brown. Remove from skillet.
  2. Cook penne pasta according to package instructions until al dente. Drain, reserving one cup of pasta water.
  3. In the same skillet, lower heat and add cream cheese and chicken broth. Stir until creamy.
  4. Gradually mix in ranch seasoning and shredded cheese until melted.
  5. Slice cooked chicken, return it to the skillet with penne, and toss everything together. Add reserved pasta water as needed for extra creaminess.
  6. Garnish with chopped green onions before serving.
