  • 34 ripe nectarines
  • 2 cups fresh spinach or kale
  • ½ cup crumbled feta cheese
  • 2 tbsp extra virgin olive oil
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Rinse quinoa under cold water until clear. In a medium pot, combine quinoa with 2 cups of water and cook over medium heat for about 15 minutes until fluffy.
  2. Preheat your oven to 400°F (200°C). Slice nectarines into wedges, toss with olive oil and honey, then roast for about 20 minutes until caramelized.
  3. In a large bowl, mix spinach or kale with crumbled feta and drizzle with lemon juice.
  4. Once the quinoa is cooked, fluff it with a fork and let it cool slightly before adding it to the greens mixture along with the roasted nectarines.
