Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • Zest of 1 orange
  • 1/4 cup fresh orange juice
  • 1 cup graham cracker crumbs
  • 4 tbsp melted butter
  • 1 tsp vanilla extract
  • Whipped cream (for topping)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs and melted butter. Press into cupcake liners in a muffin tin to form the crust.
  3. Bake the crusts for about 10 minutes until lightly golden.
  4. In another bowl, beat softened cream cheese until smooth. Gradually add sugar, orange juice, and zest; mix until fully combined.
  5. Pour the filling into each baked crust, filling about three-quarters full.
  6. Return to the oven and bake for another 15-20 minutes until just set around the edges.
  7. Cool completely at room temperature, then chill in the refrigerator for at least two hours.
  8. Top with whipped cream and extra orange zest before serving.
