- 2 cups mixed berries (fresh or frozen)
- 1 cup full-fat coconut milk
- 2–4 tbsp honey or maple syrup (to taste)
- 1 tbsp lemon juice
- Popsicle molds
Instructions
- Wash and prepare the mixed berries. If using strawberries, hull and slice them.
- In a blender, combine berries with half of the coconut milk and honey/maple syrup. Blend until smooth.
- Pour the berry mixture into popsicle molds, filling halfway. Freeze for 1-2 hours until set but not completely frozen.
- Mix remaining coconut milk with lemon juice and adjust sweetness if desired.
- Pour the coconut mixture on top of the berry layer in each mold, filling almost to the brim.
- Insert popsicle sticks carefully and freeze overnight until solid.
