Ingredients

  • 2 cups mixed berries (fresh or frozen)
  • 1 cup full-fat coconut milk
  • 24 tbsp honey or maple syrup (to taste)
  • 1 tbsp lemon juice
  • Popsicle molds

Instructions

  1. Wash and prepare the mixed berries. If using strawberries, hull and slice them.
  2. In a blender, combine berries with half of the coconut milk and honey/maple syrup. Blend until smooth.
  3. Pour the berry mixture into popsicle molds, filling halfway. Freeze for 1-2 hours until set but not completely frozen.
  4. Mix remaining coconut milk with lemon juice and adjust sweetness if desired.
  5. Pour the coconut mixture on top of the berry layer in each mold, filling almost to the brim.
  6. Insert popsicle sticks carefully and freeze overnight until solid.
