- 1 cup grated carrots
- 1 cup chopped water chestnuts
- ½ cup peanut sauce (store-bought or homemade)
- 12 large butter lettuce leaves
- 2 tbsp low-sodium soy sauce
- 2 tbsp freshly squeezed lime juice
- 1 tsp sesame oil
Instructions
- Chop chicken into small cubes. Mince garlic and ginger.
- Heat oil in a large skillet over medium heat. Add chicken and cook until golden brown (6-8 minutes).
- Stir in minced garlic and ginger; sauté until fragrant (about 1 minute).
- Add green onions, grated carrots, and chopped water chestnuts; cook for another 3-5 minutes until heated through.
- In a small bowl, mix soy sauce, lime juice, and sesame oil, then pour over the chicken mixture.
- Fill butter lettuce leaves with the chicken mixture and drizzle with extra peanut sauce if desired.
