  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 2 cloves fresh garlic, minced
  • 4 green onions, finely sliced
  • 1 cup grated carrots
  • 1 cup chopped water chestnuts
  • ½ cup peanut sauce (store-bought or homemade)
  • 12 large butter lettuce leaves
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp freshly squeezed lime juice
  • 1 tsp sesame oil

Instructions

  1. Chop chicken into small cubes. Mince garlic and ginger.
  2. Heat oil in a large skillet over medium heat. Add chicken and cook until golden brown (6-8 minutes).
  3. Stir in minced garlic and ginger; sauté until fragrant (about 1 minute).
  4. Add green onions, grated carrots, and chopped water chestnuts; cook for another 3-5 minutes until heated through.
  5. In a small bowl, mix soy sauce, lime juice, and sesame oil, then pour over the chicken mixture.
  6. Fill butter lettuce leaves with the chicken mixture and drizzle with extra peanut sauce if desired.
