Ingredients

  • 2 medium sweet potatoes (about 500g), peeled and cubed
  • 1 cup cherry tomatoes (about 150g), halved
  • 2 cups fresh kale (about 60g), chopped
  • 200g halloumi cheese, sliced
  • 2 tbsp extra virgin olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 tsp dried oregano

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss sweet potato cubes with olive oil, garlic powder, salt, pepper, and oregano until well coated.
  3. Add halved cherry tomatoes and chopped kale to the bowl; gently mix until combined.
  4. Spread the sweet potato mixture on a baking sheet and nestle the halloumi slices among the vegetables.
  5. Roast in the preheated oven for 25-30 minutes until everything is tender and lightly caramelized.
