  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 large sweet potatoes (about 2 cups, cubed)
  • 4 tbsp smooth Dijon mustard
  • 4 tbsp pure maple syrup
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • Salt and pepper to taste
  • Fresh thyme or rosemary (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash, peel, and cube the sweet potatoes. Toss them with 1 tablespoon of olive oil, salt, and pepper.
  3. Spread sweet potatoes on a baking sheet lined with parchment paper and roast for 20 minutes.
  4. While they roast, whisk together Dijon mustard, maple syrup, minced garlic, salt, and pepper in a bowl.
  5. After 20 minutes, push sweet potatoes aside on the baking sheet and place chicken breasts next to them. Brush chicken generously with the Maple Dijon sauce.
  6. Return to the oven and roast for an additional 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
  7. Serve in bowls with extra sauce drizzled over the top.
