- 2 large sweet potatoes (about 2 cups, cubed)
- 4 tbsp smooth Dijon mustard
- 4 tbsp pure maple syrup
- 2 tbsp olive oil
- 3 garlic cloves, minced
- Salt and pepper to taste
- Fresh thyme or rosemary (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Wash, peel, and cube the sweet potatoes. Toss them with 1 tablespoon of olive oil, salt, and pepper.
- Spread sweet potatoes on a baking sheet lined with parchment paper and roast for 20 minutes.
- While they roast, whisk together Dijon mustard, maple syrup, minced garlic, salt, and pepper in a bowl.
- After 20 minutes, push sweet potatoes aside on the baking sheet and place chicken breasts next to them. Brush chicken generously with the Maple Dijon sauce.
- Return to the oven and roast for an additional 25-30 minutes until the chicken reaches an internal temperature of 165°F (75°C).
