  • 6 cloves fresh garlic
  • 3 tbsp extra virgin olive oil
  • 2 tsp mixed fresh herbs (thyme, rosemary, parsley)
  • 2 cups seasonal vegetables (carrots, potatoes, bell peppers)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken and pat dry.
  3. Rub the chicken with olive oil, salt, pepper, and herbs, including inside the cavity.
  4. Smash garlic cloves with skins on and place them in the cavity with herb sprigs.
