- 4 cups low-sodium vegetable broth

- 1 cup fresh spinach, chopped
- 1 cup diced carrots
- 1 cup diced celery
- 2 tablespoons olive oil
Instructions
- In a large bowl, mix ground beef, breadcrumbs, Parmesan cheese, garlic, Italian seasoning, salt, and pepper until combined. Form into meatballs.
- Heat olive oil in a large pot over medium heat. Sauté carrots and celery until softened. Add minced garlic and cook until fragrant.
- Pour in vegetable broth and bring to a gentle simmer.
- Carefully add meatballs to the simmering broth and cook for about 15 minutes until fully cooked.
- Stir in heavy cream and let simmer for an additional 5 minutes.
