  • 1/2 cup seasoned breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1 tablespoon Italian seasoning
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream
  • 1 cup fresh spinach, chopped
  • 1 cup diced carrots
  • 1 cup diced celery
  • 2 tablespoons olive oil

Instructions

  1. In a large bowl, mix ground beef, breadcrumbs, Parmesan cheese, garlic, Italian seasoning, salt, and pepper until combined. Form into meatballs.
  2. Heat olive oil in a large pot over medium heat. Sauté carrots and celery until softened. Add minced garlic and cook until fragrant.
  3. Pour in vegetable broth and bring to a gentle simmer.
  4. Carefully add meatballs to the simmering broth and cook for about 15 minutes until fully cooked.
  5. Stir in heavy cream and let simmer for an additional 5 minutes.
  6. Add fresh spinach just before serving.
