Ingredients

  • 2 lbs starchy potatoes (e.g., Yukon Gold or Russets)
  • 1 cup chopped kale or cabbage
  • 3 green onions, chopped
  • 4 tablespoons butter
  • ½ cup milk or cream
  • Salt and pepper to taste

Instructions

  1. Peel and quarter the potatoes, then boil them in salted water until fork-tender (about 15-20 minutes).
  2. In a skillet, melt butter over medium heat and sauté the greens until wilted (about 5 minutes).
  3. Drain the cooked potatoes, return them to the pot, then add butter and milk/cream. Mash until smooth.
  4. Stir in sautéed greens and chopped green onions. Season generously with salt and pepper.
