- 1 cup chopped kale or cabbage
- 3 green onions, chopped
- 4 tablespoons butter
- ½ cup milk or cream
- Salt and pepper to taste
Instructions
- Peel and quarter the potatoes, then boil them in salted water until fork-tender (about 15-20 minutes).
- In a skillet, melt butter over medium heat and sauté the greens until wilted (about 5 minutes).
- Drain the cooked potatoes, return them to the pot, then add butter and milk/cream. Mash until smooth.
- Stir in sautéed greens and chopped green onions. Season generously with salt and pepper.
- Serve warm, optionally topped with an extra pat of butter.
