- 2 tbsp chipotle peppers in adobo sauce
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup sweet corn (fresh or frozen)
- 1/4 cup fresh cilantro, chopped (for garnish)
- 1 avocado, sliced
- 1/2 cup sour cream or Greek yogurt
- Juice of 1 lime
- 1 tsp cumin
- 1 tsp paprika
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Marinate the chicken breasts in chipotle peppers and spices for at least 30 minutes.
- Heat olive oil in a skillet over medium-high heat; cook marinated chicken for about 6-7 minutes per side until golden brown and cooked through.
- In a separate saucepan, warm black beans and corn over low heat for about 5 minutes.
- In a small bowl, mix sour cream (or Greek yogurt) with lime juice, salt, and pepper.
