Instructions
- Preheat your oven to 375°F (190°C).
- Roast the poblano peppers until charred, then cover to steam for easy peeling.
- In a skillet, sauté chopped onion until translucent, then add ground meat and minced garlic; cook until browned.
- Layer half of the meat mixture in a greased baking dish, followed by half of the roasted peppers and half of both cheeses. Repeat layers.
- Bake uncovered for 30-35 minutes until bubbly and golden.
