Ingredients

  • 1 lb ground beef or turkey
  • 1 medium onion
  • 2 cloves garlic
  • 1 tsp ground cumin
  • 1 cup shredded Monterey Jack cheese
  • 1 cup sharp cheddar cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roast the poblano peppers until charred, then cover to steam for easy peeling.
  3. In a skillet, sauté chopped onion until translucent, then add ground meat and minced garlic; cook until browned.
  4. Layer half of the meat mixture in a greased baking dish, followed by half of the roasted peppers and half of both cheeses. Repeat layers.
  5. Bake uncovered for 30-35 minutes until bubbly and golden.
