- 9 no-boil lasagna noodles
- 1 lb ground beef or turkey
- 24 oz canned tomato sauce
- 1 cup cherry tomatoes, halved
- 1 cup frozen sweet corn
- 15 oz ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 tsp Italian seasoning
- 2 tbsp olive oil
- 3 garlic cloves, minced
Instructions
- In a large skillet over medium heat, add olive oil and sauté minced garlic until fragrant. Add ground meat and cook until browned.
- Stir in canned tomato sauce, halved cherry tomatoes, and frozen corn; mix well.
- Break lasagna noodles into smaller pieces and layer them over the meat mixture. Spread ricotta cheese on top, followed by shredded mozzarella. Repeat layers until all ingredients are used.
- Cover the skillet with a lid, reduce heat to low, and simmer for about 20 minutes or until noodles are tender.
- Remove the lid and sprinkle additional mozzarella on top if desired. Cook uncovered for another 5 minutes until golden brown.
