Description

Ingredients

  • 2 cups old-fashioned rolled oats
  • 1 cup fresh blueberries (or frozen, unthawed)
  • 1/4 cup honey or pure maple syrup
  • 1 ripe banana, mashed
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1/4 cup nut butter (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a large mixing bowl, mash the ripe banana until smooth.
  3. Add rolled oats, blueberries, honey or maple syrup, cinnamon, salt, and nut butter (if using). Stir until well combined.
  4. Spread the mixture evenly in the prepared baking pan and press down gently.
  5. Bake for 25-30 minutes until golden brown around the edges and firm in the center.
  6. Let cool completely before lifting out using parchment paper. Cut into squares and enjoy!
