Ingredients

  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup all-purpose flour
  • 3 large eggs
  • 1/2 cup unsalted butter (melted)
  • 4 oz dark chocolate (melted)
  • 1 cup heavy cream (cold)
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a medium bowl, whisk melted butter and sugar until smooth. Add eggs one at a time, mixing well after each addition.
  3. Gently fold in cocoa powder and flour until just combined. Pour into the prepared pan and bake for 20-25 minutes, until moist crumbs adhere to a toothpick.
  4. While cooling, whip heavy cream until soft peaks form. Fold in melted dark chocolate gently.
  5. Once brownies are cool, spread half of the mousse over them. Top with remaining brownie pieces and layer with more mousse.
  6. Refrigerate for at least two hours before serving.
