- 8 oz cream cheese, softened
- 4 cups powdered sugar
Instructions
- Preheat oven to 350°F (175°C) and grease/flour two 9-inch round cake pans.
- In a bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time and mix in vanilla extract.
- Gradually add buttermilk to the wet mixture, then fold in dry ingredients until just combined.
- Pour batter evenly into prepared pans and bake for 25-30 minutes until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
- For frosting, beat cream cheese and butter until smooth, then gradually mix in powdered sugar. Stir in coconut flakes and chopped pecans.
- Once cooled, frost the first layer of cake with frosting, stack the second layer on top, and frost the top and sides.
