  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 cup buttermilk
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 2 cups sweetened coconut flakes
  • 1 cup toasted pecans, chopped
  • 2 tsp pure vanilla extract
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C) and grease/flour two 9-inch round cake pans.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time and mix in vanilla extract.
  4. Gradually add buttermilk to the wet mixture, then fold in dry ingredients until just combined.
  5. Pour batter evenly into prepared pans and bake for 25-30 minutes until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  6. For frosting, beat cream cheese and butter until smooth, then gradually mix in powdered sugar. Stir in coconut flakes and chopped pecans.
  7. Once cooled, frost the first layer of cake with frosting, stack the second layer on top, and frost the top and sides.
