Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs, milk, and vanilla until frothy. Gradually add dry ingredients; mix until just combined.
  4. Pour batter into prepared pans and smooth the tops. Bake for 30-35 minutes or until a toothpick comes out clean.
  5. While cakes cool, make the raspberry filling by cooking raspberries and sugar in a saucepan over medium heat for about 5-7 minutes.
  6. For the ganache, heat heavy cream until simmering and pour over dark chocolate chips; stir until smooth.
  7. Assemble the cake by filling layers with raspberry compote and pouring ganache on top.
