Instructions
- Wash all vegetables under cold water; pat dry.
- Slice sugar snap peas into bite-sized pieces. Halve cherry tomatoes and dice cucumber.
- Soak sliced red onion in cold water for 5 minutes to reduce sharpness.
- In a large bowl, combine sugar snap peas, cherry tomatoes, cucumber, red onion, and feta cheese. Toss gently.
- In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper. Drizzle over the salad and toss until everything is coated.
