  • 1 cup Arborio rice
  • 1 lb shrimp (deveined, tails removed)
  • 1 cup green peas (fresh or frozen)
  • 4 cups low-sodium chicken broth
  • 1 medium yellow onion (finely chopped)
  • 3 cloves garlic (minced)
  • ½ cup freshly grated Parmesan cheese
  • 2 tbsp butter
  • 2 tbsp olive oil
  • Zest of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Heat olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add the onion and sauté until translucent (about 5 minutes).
  2. Stir in minced garlic for about 30 seconds until fragrant. Add Arborio rice and toast lightly.
  3. Gradually add warm chicken broth one ladle at a time, stirring continuously until absorbed before adding more broth.
  4. After about 15-20 minutes, when the rice is al dente, stir in shrimp and peas. Cook until shrimp turn pink (3-4 minutes).
  5. Remove from heat and fold in remaining butter, Parmesan cheese, and lemon zest. Season with salt and pepper to taste.
