- 2 tbsp butter
- 2 tbsp olive oil
- Zest of 1 lemon

Instructions
- Heat olive oil and 1 tablespoon of butter in a large skillet over medium heat. Add the onion and sauté until translucent (about 5 minutes).
- Stir in minced garlic for about 30 seconds until fragrant. Add Arborio rice and toast lightly.
- Gradually add warm chicken broth one ladle at a time, stirring continuously until absorbed before adding more broth.
- After about 15-20 minutes, when the rice is al dente, stir in shrimp and peas. Cook until shrimp turn pink (3-4 minutes).
- Remove from heat and fold in remaining butter, Parmesan cheese, and lemon zest. Season with salt and pepper to taste.
