- 1 cup Arborio rice
- 1 cup pumpkin puree (canned or fresh)
- 4 cups vegetable broth
- 1 medium onion (finely chopped)
- 2 cloves garlic (minced)
- 1/2 cup Parmesan cheese (grated)
- 2 tbsp butter
- 1/4 tsp nutmeg (freshly grated)
- 2 tbsp sage leaves (fresh or dried)
Instructions
- In a medium saucepan, heat vegetable broth over low heat until simmering.
- In a large skillet, melt butter over medium heat. Sauté onions until translucent (about 5 minutes), then add minced garlic and cook for another minute.
- Add Arborio rice to the skillet and toast for 1-2 minutes until slightly translucent at the edges.
- Stir in pumpkin puree and one ladle of warm broth. Cook while stirring until mostly absorbed (3-4 minutes).
- Gradually add remaining broth one ladle at a time, stirring frequently until absorbed (20-25 minutes) until the risotto is creamy and al dente.
- Remove from heat and stir in Parmesan cheese, nutmeg, and sage leaves just before serving.
