  • 2 lbs Yukon Gold or Russet potatoes, peeled and diced
  • 4 tbsp unsalted butter
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 6 slices bacon, cooked and crumbled
  • 1 cup shredded sharp cheddar cheese
  • ¼ cup chopped chives or green onions
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, melt the butter. Add the chopped onions and sauté until translucent (about 5 minutes). Stir in minced garlic for another minute.
  2. Add the diced potatoes and chicken broth; bring to a boil. Reduce to a simmer and cook until potatoes are fork-tender (15-20 minutes).
  3. Gently mash some of the potatoes in the pot for a creamy texture while leaving some chunks intact.
  4. Stir in heavy cream over low heat without boiling. Mix in half of the crumbled bacon and cheddar cheese until melted. Season with salt and pepper.
