- 8 oz linguine or fettuccine
- 1 lb shrimp (peeled and deveined)
- 1 cup heavy cream
- Zest and juice of 1 lemon
- 3 cloves garlic (minced)
- ½ cup grated Parmesan cheese
- 2 tbsp fresh parsley (chopped)
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Boil salted water in a large pot. Add the pasta and cook according to package instructions until al dente. Drain, reserving some pasta water.
- In a skillet over medium heat, warm olive oil. Add minced garlic and sauté until fragrant. Add shrimp seasoned with salt and pepper, cooking until pink.
- Pour in heavy cream, lemon zest, and juice into the skillet with shrimp. Simmer for about 3-5 minutes.
- Toss in the drained pasta to the skillet, mixing well while adjusting consistency with reserved pasta water if needed.
- Remove from heat and stir in grated Parmesan until melted. Garnish with chopped parsley before serving.
