  • 4 cups fresh broccoli florets
  • 1 cup sharp cheddar cheese, shredded
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or milk)
  • Salt & pepper to taste
  • 1 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté diced onion until translucent (about 5 minutes). Add minced garlic and cook until fragrant.
  2. Stir in chopped broccoli and vegetable broth. Bring to a simmer and cook for 10 minutes until the broccoli is tender.

  4. Lower the heat and gradually stir in shredded cheddar cheese until melted. Slowly add heavy cream while stirring until well combined.
