  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 3 cloves fresh garlic, minced
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 medium yellow onion, diced
  • 6 cups low-sodium chicken broth
  • 1 can (14.5 oz) no-salt-added diced tomatoes
  • 2 cups fresh spinach or kale
  • 2 tsp Italian seasoning
  • Juice of 1 lemon
  • 1 cup small pasta shapes (optional)

Instructions

  1. In a large pot over medium heat, add olive oil and sauté onion, garlic, celery, and carrots for about 5 minutes until softened.
  2. Add chicken breasts and pour in the chicken broth and diced tomatoes. Bring to a boil, then reduce the heat to simmer.
  3. Stir in Italian seasoning and season with salt and pepper. Simmer for about 20 minutes until the chicken is cooked through.
  4. Remove chicken from the pot, shred it with two forks, and return it to the soup.
  5. Stir in spinach or kale and optional pasta; cook for an additional 5-10 minutes until pasta is tender.
  6. Finish with freshly squeezed lemon juice before serving.
