- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 1 cup long-grain white rice
- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 yellow onion, diced
- 3 cloves garlic, minced
- 6 cups low-sodium chicken broth
- 1 tsp dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Dice the onions, carrots, and celery into bite-sized pieces.
- Optional: Sauté onions and garlic in a separate pan until fragrant.
- Place chicken breasts at the bottom of the crockpot; add rice, chopped veggies, thyme, salt, pepper, and pour over chicken broth.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through and rice is tender.
- Shred the chicken in the pot using two forks; stir everything together.
- Serve hot with fresh parsley as garnish if desired.
