Ingredients

  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup long-grain white rice
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 6 cups low-sodium chicken broth
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Dice the onions, carrots, and celery into bite-sized pieces.
  2. Optional: Sauté onions and garlic in a separate pan until fragrant.
  3. Place chicken breasts at the bottom of the crockpot; add rice, chopped veggies, thyme, salt, pepper, and pour over chicken broth.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken is cooked through and rice is tender.
  5. Shred the chicken in the pot using two forks; stir everything together.
  6. Serve hot with fresh parsley as garnish if desired.
