  • 3 cloves garlic (minced)
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 1 tsp ground cinnamon
  • 1 tsp pumpkin spice blend (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Halve the fresh pumpkin, scoop out seeds, and roast for about 40 minutes until fork-tender.
