Ingredients

  • 1 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 34 tbsp cold water
  • 1 cup heavy cream
  • 2 tbsp vanilla extract
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh blueberries
  • Fresh mint leaves (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour and sugar. Cut in cold butter until crumbly.
  2. Gradually add cold water until dough forms. Wrap in plastic wrap and chill for 30 minutes.
  3. Roll out the dough and fit it into a tart pan. Bake for 20 minutes or until golden brown.
  4. While cooling, whip heavy cream with sugar and vanilla until soft peaks form.
  5. Spread whipped cream over the cooled crust, then top with strawberries and blueberries.
  6. Chill in the fridge for at least one hour before slicing and serving.
