- 1 cup all-purpose flour
- 2 tbsp granulated sugar
- 1/2 cup unsalted butter, cold and cubed
- 3–4 tbsp cold water
- 1 cup heavy cream
- 2 tbsp vanilla extract
- 1 cup fresh strawberries, sliced
- 1 cup fresh blueberries
- Fresh mint leaves (optional)
Instructions
- Preheat the oven to 350°F (175°C). In a mixing bowl, combine flour and sugar. Cut in cold butter until crumbly.
- Gradually add cold water until dough forms. Wrap in plastic wrap and chill for 30 minutes.
- Roll out the dough and fit it into a tart pan. Bake for 20 minutes or until golden brown.
- While cooling, whip heavy cream with sugar and vanilla until soft peaks form.
- Spread whipped cream over the cooled crust, then top with strawberries and blueberries.
- Chill in the fridge for at least one hour before slicing and serving.
