  • 1 lb lean ground beef
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 tsp chili powder
  • 8 corn tortillas
  • 2 cups shredded Monterey Jack cheese
  • 1 cup enchilada sauce
  • Fresh cilantro, for garnish

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef with chopped onions and minced garlic until onions are translucent (about 8 minutes). Drain excess fat.
  3. Stir in chili powder, salt, pepper, and cook for another 2-3 minutes.
  4. Warm tortillas in the microwave or on a skillet until pliable. Fill each tortilla with beef mixture and cheese, then roll tightly.
  5. Spread some enchilada sauce on the bottom of a baking dish. Place rolled enchiladas seam-side down in the dish and pour remaining sauce on top. Sprinkle with more cheese.
  6. Bake uncovered for 20-25 minutes until bubbly and golden.
