- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 2 tsp chili powder
- 8 corn tortillas
- 2 cups shredded Monterey Jack cheese
- 1 cup enchilada sauce
- Fresh cilantro, for garnish
Instructions
- Preheat oven to 350°F (175°C).
- In a skillet over medium heat, brown the ground beef with chopped onions and minced garlic until onions are translucent (about 8 minutes). Drain excess fat.
- Stir in chili powder, salt, pepper, and cook for another 2-3 minutes.
- Warm tortillas in the microwave or on a skillet until pliable. Fill each tortilla with beef mixture and cheese, then roll tightly.
- Spread some enchilada sauce on the bottom of a baking dish. Place rolled enchiladas seam-side down in the dish and pour remaining sauce on top. Sprinkle with more cheese.
